We sell various beef products in the Farm Store and occasionally have Freezer Beef (whole or half beef processed to your specifications) available for sale.

We are not yet sure if we will have Freezer Beef available in 2024 due to the waiting list we already have.

Freezer Beef

Available in Whole and Half shares.

Whole or Half Shares of Beef:

  • Whole Beef Share - $6.50 per pound delivered meat.

  • Half Beef Share - $6.75 per pound delivered meat.

  • You only pay for the meat you receive and all processing and delivery (within mile radius depending on size of purchase) are included.

  • A $500 deposit is required to reserve your whole beef and a $250 deposit to reserve a half beef.

  • Free delivery available up to 120 miles depending on size of purchase.

 

All of our beef products will be completely raised on grass with no hormones and no antibiotics providing beef with more nutrients than what you can buy in the store. With exceptional flavor and raised on local farm right here in Kentucky!

We use Summit Meat Processing to provide our custom beef processing and all of our beef is dry aged for fourteen days. You can customize your processing selection by downloading and completing the processing cut sheet below. A month before the processing date I will be in contact to talk through the cut sheet (at the bottom of the page is how I have a beef processed in case it all seems overwhelming). Also, once you complete the cut-sheet I handle everything else from communicating with the processor to delivering to your door step.

We provide the option of purchasing a whole or half share of beef. You will receive a mixture of steaks (25%), roasts (25%) and ground beef (50%). To store your meat you will need a freezer. A good rule of thumb is that 30 pounds of meat requires 1 cubic feet of freezer space.

What can you expect:

  • Steers are ready for slaughter at approximately 1100lbs

  • Once the butcher removes inedible weight the "hanging weight" remains.

  • Hanging weight is approximately 60% of the original weight or 660lbs.

  • Actual take home meat will be ~65% of the hanging weight (429lbs in this example), but varies based on evaporative loss and waste during the butcher process along with your choice of cuts (see below).

  • You only pay for the amount of meat you receive. If you receive 429lbs of beef the total cost would be $2,788.50 for a whole beef share.

Your freezer beef will be delivered to your house (up to 120 miles) or you can pick-up directly from the farm.

Does the Cut Sheet seem confusing? You are not alone. Here is an example of what I do with a whole beef for my family:

Generally, you are going to receive 40% - 60% of the total meat in ground beef. The example below would be closer to 40% as we like to maximize all the cuts.

  • Chuck - Five 4lb Bone-In Roasts

  • Short Ribs - left on the bone (fantastic)

  • Rib - all steaks, boneless (ribeyes) 1 1/2 inch thick

  • Short Loin/Tenderloin - T-Bones 1 1/2 inch thick

  • Sirloin - all steaks, boneless (1 inch thick) and definitely want the tri-tip roast separated

  • Round - all roasts with bone-in and 4lbs except for the Rump and Top (Cube Steak)

  • Brisket - whole

  • Flank - whole

  • Plate - whole (great for taco night)

  • Shank - left on the bone!!! Best soup and bone broth you will ever make

  • Stew Meat - We love soups and stews so generally get twenty 1lb packages

  • Oxtail and Liver - I would keep and have liver sliced
